Apple and Brie Grilled Cheese
Sweet, salty, creamy, and crunchy… This grilled cheese has it ALL. This brie sandwich is so delicious it will make you forget it is healthy. Sandwiches are a great way to add servings of fruits and veggies to your day! I hope this recipe sparks some creativity next time you go to make a sammy.

Which bread should I use?
I used flatout flat bread as it has a whopping 10 grams of fiber per flatbread! I found them at target for around $3 per package or your can get them on amazon. Feel free to swap this out for your favorite bread or flatbread
Can you eat the rind on brie cheese?
To rind or not to rind… Its all about preference here. The rind is perfectly edible and can add an excellent umami flavor. If you don’t like it (or it weirds you out!) just chop it off.

Pro-Tips:
If using a flatbread to make the sandwich, toast it before adding your ingredients. This will give the sandwich a nice crunch.
Don’t like flatbread? Swap it out for your favorite bread!
Layer the sandwich with the apple down first, this will help soften the apple and you will avoid melting your cheese too much. After first experimenting with this recipe, I made the mistake of starting with brie and it all melting away into a soupy mess!
Butter: I did not add butter to the outside of my bread but feel free to if you are looking for more of a classic grilled cheese.
Apple and Brie Grilled Cheese
ingredients:
- 1/4 of an apple (we used Fuji apples but any will work)
- Flatout flatbread (or swap for your favorite bread/flatbread)
- 2 oz brie cheese
- 1 oz prosciutto
- 1/4 cup arugula
instructions:
How to cook Apple and Brie Grilled Cheese
- If using a flatbread, toast the bread first to add a nice crunch. Place the flatbread in a medium pan (or panini press) on medium heat. Toast for 2 minutes on each side. Skip this step if using regular bread.
- While the flatbread is toasting, cut apples and cheese into 1/2 inch slices.
- Put the grilled cheese together: add apples first, then cheese, top with prosciutto and arugula.
- Top with the other side of flatbread or bread and toast for approximately 1 minute on each side until the cheese is slightly melted.
- Enjoy!
