Easy Shakshuka Recipe
What makes this recipe so simple? You can just dump all of your ingredients in, crack an egg on top and have a healthy meal in minutes.
Want to make it even easier? Use fresh or frozen pre-chopped ingredients and make this dish in minutes.
This is also a great “clean out the fridge” dish. Have some leftover vegetables or meat? Throw 'em in! This recipe can be easily customized to fit all tastes :-)

How to know when you egg is done cooking?
The egg whites should be mostly opaque
Jiggle the pan, the eggs should wiggle a bit for a runny yolk.
Cook longer for a hard yolk. You can carefully use the back of a spoon to test the doneness of the yolk.
The eggs will continue to cook even after you have taken it off of the heat. Take the eggs off of the heat if you feel like your eggs are close to being done.
What should I serve this with?
- This dish is great as is! Just find a fork and dig in :-)
- It is traditionally served withs ome crunchy bread or pita. I love this whole wheat pita bread to dip into the golden yolk!
Shakshuka for One!
ingredients:
- 1/2 can of diced tomatoes (do not drain liquid)
- 2 eggs
- 2 tbsp chopped onion
- 2 tbsp chopped bell pepper
- 1/2 cup fresh spinach
- 1/2 tsp minced garlic
- 1/2 tbsp tomato paste
- 1/2 tsp paprika
- Optional: Pinch of cayenne
- Optional toppings: feta, kalamata olives, parsley
instructions:
How to cook Shakshuka for One!
- Heat olive oil on medium heat in small pan.
- Add onions, bell pepper, garlic, and spinach to pan. Cook until spinach begins to wilt and onions begin to caramelize.
- Add diced tomatoes, tomato paste, and spices to pan. Use the back of the spoon to mash larger tomato chunks.
- Turn heat to a simmer and allow tomato mixture to thicken, about 5 minutes.
- Gently crack eggs on top of tomato mixture.
- Cover pan and simmer until eggs are done. (see tips above)
- Add optional toppings: feta, kalamata olives, parsley.
- Enjoy!
