Incredible Instant Pot French Onion Soup

Curl up with a mug of this delicious french onion soup to make any day amazing! This savory soup combines THREE different types of onions to create that perfect onion balance.
Oh and because this is a nutrition blog… I will let ya know that onions are actually VERY healthy for you! Studies have found that onion consumption (especially red onions!) caused a decrease in blood glucose (sugar) in individuals with diabetes (1, 2).
Research also suggests a correlation between eating onions and a decrease in multiple different cancers (3).

Instant Pot Onion Soup Tips
Why use THREE different types of onions?
Sweet Onions (aka Vidalia or Walla Walla)- are well, sweet. If you love a sweet onion soup you can go ahead and only use sweet onions.
Red Onions- add a deeper onion flavor with a little sharpness. Red onion is added to balance out the sweet onion.
Shallot - A great balance of sweet, bold flavor, and richness.
So, if you add all three together you get THE PERFECT SOUP.
What is the best way to cut the onions?
Try not to cry! Here are a few tips to avoid the onion tears
Use a sharp knife!
Set onions in freezer for 15 minutes prior to cutting
Also, try chopping them under running water (but be careful!)
Slice onion in half
Chop off the ends of the onion and remove the outside skin
Chop into 1/4 inch slices
What will I need?
- Oven-safe mug
- Instant Pot / pressure cooker
Instant Pot French Onion Soup
ingredients:
- 2 shallots, sliced
- 2 red onions, sliced
- 2 sweet onions, sliced
- 3 tbsp butter
- 3 cloves garlic (minced)
- 8 cups low sodium beef broth (2 32oz containers)
- 1 cup dry red wine
- 3 sprigs thyme
- 2 bay leaves
- 1 tbsp Worcestershire sauce
- salt to taste
- 1/2 loaf french bread, sliced into 1-inch pieces
- 2 cups shredded Gruyere cheese (or substitute with Provolone or Parmesan)
instructions:
How to cook Instant Pot French Onion Soup
- Pre-heat oven to 350 F
- Turn on instant pot to saute setting
- Add butter, sliced onions and garlic to instant pot
- Saute for 10-15 minutes, until onions begin to sweat. YOU DO NOT NEED TO CARAMELIZE THE ONIONS. The onions will continue to cook later
- Add beef broth, red wine, thyme, bay leaves, Worcestershire sauce, and salt to instant pot
- Place lid onto the instant pot and set on manual high for 20 minutes
- While the soup cooks, toast french bread in oven (approximately 3-5 minutes)
- Allow the pressure to naturally release for 10 minutes before switching the quick-release valve
- Remove bay leaves and thyme stems
- Turn oven to broil setting
- Place soup into oven-safe mug and top with toasted bread and shredded cheese
- Broil soup until cheese begins to bubble, approximately 1-2 minutes
