Mojo Style Pressure Cooker Pulled Pork

Okay guys, this electric pressure cooker pulled pork is my favorite way to cook pork. It’s my favorite way because it is d@mn delicious and so easy to make! After recently moving away from Miami I was craving Cuban style pork and this definitely hit the spot. This recipe utilizes a mouthwatering Mojo seasoning with fresh citrus, garlic, oregano, and cumin. Pair this with brown rice and veggies, use it in a sandwich, or make your own pork burrito bowl :-)

Pro Tips:
- Don't have an instant pot/ pressure cooker? Use your slow cooker! Cook the meal in your slow cooker on low for 8 hours on high for 4 hours.

Mojo Style Pressure Cooker Pulled Pork
ingredients:
- 3 lbs bone-in pork shoulder
- 2 oranges
- 2 limes
- 3 small yellow onions, roughly chopped
- 1 tbsp minced garlic
- 2 tbsp oregano
- 1 tbsp cumin
- 1/4 cup olive oil + 1 tbsp olive oil
- 1 tsp salt
instructions:
How to cook Mojo Style Pressure Cooker Pulled Pork
- Juice limes and oranges into medium bowl.
- Add minced garlic, oregano, cumin, salt, and 1/4 cup olive oil to juice.
- Turn instant pot on saute setting and add 1 tbsp olive oil. (If working with a slow cooker, heat olive oil in a large pan).
- Brown all sides of pork in instant pot, approximately 2 minutes on each side.
- Add marinade mixture and onions to the pork in the instant pot.
- Set instant pot to high pressure for 60 minutes (if using slow cooker, cook on low for 8 hours or high for 4 hours).
- When timer beeps allow pressure to naturally release for 15 minutes and then turn valve to quick release.
- Shred pork using two forks and remove bone. Be cautious as contents are hot!
- Optional step for extra flavor: Turn Instant Pot back to manual setting on high pressure for 5 minutes.
- Optional step for extra flavor: Allow pressure to naturally release for 3 minutes and then turn valve to quick release.
- Enjoy! We paired our dish with brown rice and salad.
